Mediterranean Chicken Kebab Salad
Ingredients:
Marinade
- 1 lb Boneless Skinless Chicken Breasts cut into 1 inch cubes
- 2 tbsp Lemon Juice
- 1 tsp Dried Oregano
- 2 cloves Garlic minced or pressed
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Salad
- 2 Cucumbers peeled and chopped
- 2 Tomatoes chopped
- 1 Bell Peppers chopped
- .25 c Red Onions finely chopped
- .25 c Black Olives sliced or chopped
- 1.5 tsp Red Wine Vinegar
- 1.5 tsp Lemon Juice
- 2 tsp Olive Oil
- 1 tsp Fresh Dill or sub 1/2 tsp dried dill
- 1 tsp Fresh Parsley chopped
- .125 tsp Dried Oregano
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
- 4 c Romaine Lettuce chopped
- .5 c Feta Cheese Omit for Paleo
- 1 Lemons cut into wedges
Instructions:
- Marinate the chicken at least 2-3 hours or overnight.
- If using wooden skewers, soak in water at least 30 minutes if grilling outdoors.
- Combine the first 13 salad ingredients (cucumbers through salt and black pepper, not the lettuce) and set aside in the refrigerator to let the flavors set.
- Thread chicken on 4 skewers and cook on a hot grill (indoor or outdoor grill) until chicken is cooked though, about 10-12 minutes.
- Divide lettuce between serving plates, top with the tomato-cucumber salad, feta cheese (if not Paleo), and grilled chicken. Serve with lemon wedges.
