Lemongrass Chicken with Cilantro & Chiles

Ingredients:

  • 2 tbsp Fresh Ginger peeled and grated
  • 1 tbsp Lemongrass finely chopped
  • 4 cloves Garlic minced or pressed
  • 1 tbsp Honey
  • 1 tsp Fish Sauce
  • 2 lbs Boneless Skinless Chicken Thighs
  • 2 tbsp Olive Oil
  • 1 Serrano Peppers thinly sliced
  • .25 c Fresh Cilantro chopped

Instructions:

  • In a medium bowl, whisk ginger, lemongrass, garlic, honey, and fish sauce. Add chicken and toss until coated. Let marinate for 10 minutes.
  • In a nonstick skillet, heat oil over medium-high heat. Add chicken and cook until browned and cooked through, about 5 minutes per side.
  • Top with sliced chiles and cilantro to serve.
