Italian Chopped Salad
Ingredients:
- 4 c Romaine Lettuce chopped
- 2 Tomatoes chopped
- 15 oz Chickpeas 1 can drained and rinsed
- 1 c Black Olives sliced
- 1 c Red Onions chopped
- .25 c Sun Dried Tomatoes finely chopped
- 1 Cucumbers chopped
- .25 c Olive Oil
- .25 c Balsamic Vinegar
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Combine all ingredients in a large mixing bowl, except oil, vinegar, and salt and pepper, and toss well.
- In a small bowl whisk together the oil, vinegar, salt, and pepper until emulsified.
- Toss dressing with salad just before serving.
