Instant Pot Roast Pork with Apple-Onion Sauce

  • Set Instant Pot to Saute with 1 tbsp oil and when display says HOT, sear the pork butt on all sides browning it. Remove and set aside.
  • Place apples, onions, and chicken broth in Instant Pot and cook down slightly for 3-5 minutes to soften the onions.
  • In a bowl, combine remaining oil, garlic, and spices then rub all over pork roast. Place roast, fattiest side up, on top of apples and onions in the Instant Pot.
  • Cover the lid. Set the Instant pot to Manual/Pressure Cooking mode. Cook for 60 minutes on high pressure. Then let the pressure release naturally for 10 minutes, followed by manual pressure release. When done, remove from Instant Pot, and shred.
  • Place the apples, onions, and all juices in a blender and blend on low speed until liquefied. Add salt and pepper to taste. Serve over shredded pork.
