Honey Mint Roasted Carrots

  • 1 lb carrots peeled and chopped
  • 4 tbsp honey
  • 4 tbsp olive oil
  • .25 c fresh mint chopped

Instructions:

  • Preheat oven to 350 F (175 C).
  • Toss the honey, olive oil, and carrots together.
  • Roast for 30 minutes. Sprinkle mint on top.
