It’s that wonderful time of the year again when we all go head over heels for everything pumpkin! We found that many of the vegetarian pumpkin chili recipes were thin or watery (or just plain flavorless) so we came up with this one. This rich delicious chili is hearty enough for everyone and thick enough to make your spoon stand right up! We hope you enjoy this yummy chili as much as much as we did!

Hearty Vegetarian Pumpkin Chili

Hearty Vegetarian Pumpkin Chili


1 yellow onion, chopped
1 carrot, chopped
1 bell pepper, chopped
1 T. olive oil
3 cloves garlic, minced
1 T. tamari
3 T mild chili powder
1 tsp ground cumin
1 can (14.5 ounces) fire roasted tomatoes
1 1/2 cups pureed pumpkin
2 cups vegetable broth
1 can (14.5 ounces) black beans

1 tablespoon lime juice
Toppings: shredded cheese, cilantro, chopped onion, jalapeños, avocado, tortilla strips


In a large soup pot, heat the oil over medium heat. Add the onion, carrot, and bell pepper and sauté them until they begin to brown, about 5 minutes. Stir in the garlic and spices and cook for 30 seconds. Stir in the tomatoes, pumpkin, broth, and beans. Reduce the heat then cover, and let that simmer together for about 15 minutes. Turn off the heat and stir in the lime juice. Serve right away with your favorite toppings.
