Garlic Mashed Rutabagas
Instructions:
- In a medium saucepan, combine rutabagas, salt, and garlic. Add water to cover rutabagas and cover saucepan and bring to a boil over high heat for 5 minutes.
- Reduce heat to low and simmer for 30 minutes or until rutabagas are fork-tender.
- Drain the rutabagas and transfer to a food processor. Add olive oil and puree until it reaches your desired consistency.
