Garlic Chicken with Peppers
Ingredients:
- 2 Bell Peppers red, medium, cut into 1-inch-wide strips
- 2 c Onions cut in wedges
- 12 cloves Garlic peeled
- 1 tbsp Tapioca Starch
- 2 tsp Dried Rosemary crushed
- .25 tsp Ground Black Pepper
- .5 cup Chicken Broth
- 3 lbs Boneless Skinless Chicken Thighs
- 1 tbsp Lemon Juice
Instructions:
- In a 4-quart (or larger) slow cooker combine red bell peppers, onions, garlic, tapioca starch, dried rosemary, lemon juice, and ground black pepper.
- Pour broth over mixture in cooker. Add chicken.
- Cover and cook on low-heat setting for 5 hours or on high-heat setting for 2 1/2 hours.
