Fennel Potatoes
Ingredients:
- 1 lb Fingerling Potatoes halved
- 1 Fresh Fennel sliced thinly
- 1 c Onions sliced thinly
- 6 cloves Garlic sliced
- .33 c Fresh Sage 8 leaves
- 2 tbsp Olive Oil
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Preheat oven to 425 degrees.
- Toss all ingredients together and spread out on a sheet tray in a single layer. Roast for 35-40 minutes, tossing halfway through. Season with additional salt and pepper as needed.
