Ingredients:

  • 1 lb Fingerling Potatoes halved
  • 1 Fresh Fennel sliced thinly
  • 1 c Onions sliced thinly
  • 6 cloves Garlic sliced
  • .33 c Fresh Sage 8 leaves
  • 2 tbsp Olive Oil
  • .5 tsp Sea Salt
  • .25 tsp Ground Black Pepper

Instructions:

  • Preheat oven to 425 degrees.
  • Toss all ingredients together and spread out on a sheet tray in a single layer. Roast for 35-40 minutes, tossing halfway through. Season with additional salt and pepper as needed.
