Crispy Roasted Sweet Potatoes Fries with Lime and Cilantro
Ingredients:
- 4 Sweet Potatoes large
- 2 tbsp Olive Oil
- 1/2 tsp Lime Zest
- 1 tsp Sea Salt to taste
- 1 tbsp Fresh Cilantro chopped
- .5 tsp Ground Black Pepper Omit for strict AIP
Instructions:
- Coat sweet potato wedges with the olive oil and the lime zest.
- Season with the salt and pepper. Roast on two rimmed baking sheets at 425 degrees, tossing once, until golden brown for roughly 15–18 minutes.
- Drizzle with lime juice and chopped cilantro leaves.
