Creamy Cauliflower Fauxtatoes
Ingredients:
- 2 heads Cauliflower washed and cut into chunks
- 6 tbsp Coconut Oil or ghee or butter
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper Omit for AIP
Instructions:
- Steam the cauliflower until tender (approximately 10–12 minutes).
- Place cooked cauliflower in a food processor and purée the cauliflower until nice and creamy.
- Add coconut oil (or butter), salt, and pepper and continue to blend until well combined.
- Serve immediately.
- This also freezes well in individual pyrex containers for a quick grab-and-go lunch idea!
