Creamed Spinach
Ingredients:
- 1 c Onions 1 onion, finely diced
- 6 cloves Garlic minced
- 2 tbsp Olive Oil or fat of your choice
- 1 tsp Sea Salt can also add black pepper if tolerated
- .5 tsp Garlic Powder
- .5 tsp Onion Powder
- 10 c Baby Spinach or other greens
- .5 c Fresh Parsley chopped
- 1.5 c Full Fat Canned Coconut Milk
Instructions:
- In a large skillet, heat the oil over medium heat and add the onions and garlic.
- Sauté until lightly browned. Add the salt, garlic powder, and onion powder and stir to combine.
- Add the baby spinach, parsley, and coconut milk.
- Cover and reduce heat to low until the spinach is wilted.
- Stir to combine and remove from heat.
- Serve with your favorite meal.
