Cold Asian Zoodle Salad

Ingredients:

  • 2 tbsp Coconut Aminos Or Tamari
  • 1 tbsp Olive Oil
  • 2 tsp Lime Juice
  • 1 tsp Fresh Ginger minced
  • .5 tsp Coconut Sugar
  • 4 Zucchini spiralized
  • 2 Carrots spiralized
  • .25 c Radishes spiralized
  • 2 bunches Green Onions chopped
  • 2 tbsp Fresh Cilantro chopped
  • 2 tsp Fresh Basil chopped
  • 2 tsp Fresh Mint chopped

Instructions:

  • In a mason jar or container with a tight-fitting lid, combine the coconut aminos, olive oil, lime juice, ginger, and coconut sugar. Shake vigorously and set aside.
  • In a large bowl, toss remaining ingredients together, mixing well.
  • Pour dressing over vegetables and mix well before serving.
