Coconut Rice
Ingredients:
- 3 c Full Fat Canned Coconut Milk
- 1.5 c White Rice
- 1 Dried Bay Leaf
- .5 tsp Ground Coriander
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Bring coconut milk to a gentle boil in a 2-quart saucepan.
- Add rice, salt, bay leaf, and coriander. Stir, reduce heat to simmer, and cook for 20 minutes, or until rice is tender and liquid is absorbed.
- Remove bay leaf and add freshly ground black pepper to taste.
