Chicken Sausage and Vegetable Skillet

Ingredients:

  • 1 lb Chicken Sausage 5 links, sliced
  • 1 c Onions 1 onion, sweet, cut into large chunks
  • 1 Zucchini 1 small, halved lengthwise and sliced into moons
  • 1 Yellow Squash 1 small yellow squash, halved lengthwise and sliced into moons
  • 1 Bell Peppers 1 red pepper, cut into large chunks
  • 1 Bell Peppers 1 yellow pepper, cut into large chunks
  • 6 oz Cremini Mushrooms about 6 mushrooms, quartered
  • 3 tbsp Butter
  • 2 cloves Garlic minced or pressed
  • 0.50 tsp Italian Seasoning
  • 1 tsp Crushed Red Pepper Flakes
  • 1 tsp Sea Salt
  • .5 tsp Ground Black Pepper

Instructions:

  • In a large skillet over medium heat, melt the butter.
  • Add the chicken sausage, garlic and onion to the skillet and saute for 10 minutes.
  • Add zucchini, squash, bell peppers, mushrooms, Italian seasoning, red pepper flakes, sea salt and pepper to the pan and saute for an additional 10-15 minutes or until vegetables are crisp tender.
