Chicken Cheese Bundles
Ingredients:
- 0.50 bunch Green Onions chopped
- 1 tsp Dried Parsley
- 2 cloves Garlic minced
- 1 c Cheddar Cheese shredded
- 4 oz Cream Cheese softened
- 1.5 lb Boneless Skinless Chicken Breasts 4 breasts
- 1 tsp Sea Salt
- 1 tbsp Olive Oil
- .25 tsp Ground Black Pepper
- .5 c Gluten-Free Bread Crumbs
- 1 tbsp Butter melted
- .25 tsp Garlic Powder
- .25 tsp Dried Basil
- .25 tsp Dried Oregano
Instructions:
- In a small bowl combine cheddar cheese, cream cheese, green onion, parsley, and garlic; set aside.
- Place a chicken breast half between 2 pieces of plastic wrap.
- Using the flat side of a meat mallet pound chicken lightly into a rectangle about 1/8 inch thick.
- Remove plastic wrap. Sprinkle with salt and pepper.
- Sprinkle with one-fourth of the cheese mixture. Place about a quarter teaspoon of butter piece in center of chicken piece. Fold in sides; roll up.
- Repeat with remaining chicken.
- If needed, use a toothpick or butcher's twine to hold the chicken closed. Chill in fridge for 30 minutes.
- Preheat oven to 400 degrees.
- While chicken chills, mix gluten free bread crumbs, melted butter, dried oregano, dried basil, and garlic powder.
- In a large skillet add oil.
- Add chilled chicken rolls.
- Cook about 5 minutes or until golden brown, turning to brown all sides. Place rolls in a 2-quart rectangular baking dish. Top chicken with gluten free bread crumb mixtures, splitting between the four breasts.
- Bake, uncovered in oven for 15 to 18 minutes or until chicken is no longer pink on the inside (170 degrees F). Spoon any drippings over rolls.
