Chicken BLT Chopped Salad
Ingredients:
- 2 c Rotisserie Chicken shredded or chopped
- 4 slices Bacon cooked and chopped
- 4 c Romaine Lettuce chopped
- 1 Avocado diced
- 1 c Cherry Tomatoes halved
- .25 c Goat Cheese crumbled
Lime Viniagrette
- .25 c Olive Oil
- .25 c Apple Cider Vinegar
- 1 tsp Lime Zest
- 2 tbsp Lime Juice
- 2 tsp Honey
Instructions:
- To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest and juice, and honey in a small bowl; set aside.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- In a large bowl, combine shredded chicken, romaine lettuce, avocado, tomatoes, goat cheese, and bacon. Stir in lime vinaigrette. Serve immediately.
