Ingredients:

  • 2 c Rotisserie Chicken shredded or chopped
  • 4 slices Bacon cooked and chopped
  • 4 c Romaine Lettuce chopped
  • 1 Avocado diced
  • 1 c Cherry Tomatoes halved
  • .25 c Goat Cheese crumbled

Lime Viniagrette

Instructions:

  • To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest and juice, and honey in a small bowl; set aside.
  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a large bowl, combine shredded chicken, romaine lettuce, avocado, tomatoes, goat cheese, and bacon. Stir in lime vinaigrette. Serve immediately.
