Cauliflower Mac & Cheese with Sausage
Ingredients:
- 1.5 lb Frozen Cauliflower
- .5 c Onions chopped
- .75 c Heavy Cream
- 3 oz Cream Cheese
- 1 tsp Dijon Mustard
- .5 c Muenster Cheese cubed
- 1.5 c Cheddar Cheese shredded, divided
- 1 c Baby Spinach
- .5 lb Sweet Italian Pork Sausage 2 links, sliced
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 2 cloves Garlic minced or pressed
- 2 tsp Olive Oil
Instructions:
- Preheat oven to 375 degrees.
- Steam or boil cauliflower until crisp-tender, drain. Remove excess water by squeezing cauliflower in a towel or patting out moisture, set aside.
- While cauliflower cooks, add olive oil to a saucepan and cook sausage slices over medium-high heat. Set sausage aside.
- In the same saucepan, over medium heat add olive oil and saute onions until softened.
- Add heavy cream to pan, lower heat and bring to simmer. Break cream cheese into small pieces and add to pan stirring quickly.
- Add fresh spinach, sausage, mustard, garlic, pepper, and salt to the saucepan.
- Once all cream cheese is smooth, remove the pan from heat. Combine cream mixture with muenster cheese and 1 cup cheddar.
- Stir quickly with a spatula until smooth and add cauliflower.
- Place into 8×8 baking dish and top with remaining 1/2 cup cheddar.
- Bake at 375 for 15-20 minutes until cheese is bubbling and brown.
