Cajun Shrimp and Cauliflower ‘Grits’

Ingredients:

  • 1 tsp Sea Salt
  • 1 head Cauliflower cut into florets
  • .25 c Whole Milk
  • 2 tbsp Parmesan Cheese
  • .25 tsp Sea Salt
  • .5 tbsp Olive Oil
  • .25 c Onions chopped
  • 2 cloves Garlic minced or pressed
  • 10 Shrimp peeled and deveined
  • .5 tsp Cajun Seasoning
  • 2 tbsp Fresh Parsley chopped

Instructions:

  • In a medium pot, bring plenty of water to a boil. Add 1 tsp of salt and cauliflower florets, and boil until the cauliflower becomes very soft.
  • Drain water. Add milk, Parmesan cheese, and salt and mash the cauliflower. Adjust the amount of milk and salt to taste. Set aside.
  • In a sauté pan, heat olive oil and sauté onion for a few minutes. Add garlic and sauté until the garlic is fragrant.
  • Add shrimp, sprinkle cajun seasoning and salt and sauté until the shrimp is cooked. Turn off the heat and add parsley.
  • Split mashed cauliflower between plates and add sautéed shrimp on top.
