Cajun Chicken with Carrot Cabbage Slaw

  • Zest 1 tsp from limes, then cut into quarters. Prick sweet potatoes all over with fork.
  • Mix sour cream, lime zest, 1 tbsp cajun seasoning, and a juice of one lime. Season with .5 tsp salt and .25 tsp pepper. 
  • Toss cabbage and shredded carrots in a medium bowl with half the sour cream mixture and coconut sugar. Season with more salt and pepper as needed. Let chill in refrigerator while chicken cooks.
  • Heat 1 tbsp oil in a large pan over medium heat. Season with remaining salt, pepper, and cajun seasoning. Add chicken to pan and cook until no longer pink in the center, about 6 minutes per side. Remove from pan and set aside to rest.
  • Slice chicken and serve with slaw. Use remaining sour cream mixture to dip chicken in and serve with lime wedges.
