Braised Balsamic Chicken

  • Season both sides of chicken breasts with salt and black pepper. Set aside.
  • In a large skillet, heat olive oil over medium heat. Add chicken and brown both sides, approximately 3 to 4 minutes per side.
  • Add onion and garlic to the skillet. Cook, stirring frequently, until onion is soft and translucent, approximately 3 to 4 minutes.
  • In a medium bowl, combine balsamic vinegar, diced tomatoes, basil, oregano, rosemary, and thyme. Pour mixture over chicken, stirring to combine.
  • Reduce heat to medium-low and simmer until chicken is no longer pink and internal temperature reaches 160 degrees F, approximately 15 minutes.
  • Remove from heat and serve with favorite side dish.
