Braised Balsamic Chicken
Ingredients:
- 1 c Onions 1 onion, thinly sliced
- 2 cloves Garlic minced
- 1.50 lb Boneless Skinless Chicken Breasts halves
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
- 2 tbsp Olive Oil
- 0.50 c Balsamic Vinegar
- 14.5 oz Diced Tomatoes 1 can
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- 1 tsp Dried Rosemary
- 0.50 tsp Dried Thyme
Instructions:
- Season both sides of chicken breasts with salt and black pepper. Set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken and brown both sides, approximately 3 to 4 minutes per side.
- Add onion and garlic to the skillet. Cook, stirring frequently, until onion is soft and translucent, approximately 3 to 4 minutes.
- In a medium bowl, combine balsamic vinegar, diced tomatoes, basil, oregano, rosemary, and thyme. Pour mixture over chicken, stirring to combine.
- Reduce heat to medium-low and simmer until chicken is no longer pink and internal temperature reaches 160 degrees F, approximately 15 minutes.
- Remove from heat and serve with favorite side dish.
