Blackened Salmon with Avocado Salsa

Ingredients:

  • 1.5 lbs salmon fillets 4 fillets
  • 4 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 avocados diced
  • .25 c red onions diced
  • 1 jalapenos small, finely diced
  • 1 tbsp fresh cilantro rinsed and chopped
  • 1 tbsp lime juice
  • 1 tbsp bell peppers red, finely diced
  • .5 tsp paprika
  • .5 tsp cumin ground
  • .25 tsp sea salt

Instructions:

  • Heat oil in a large skillet. Season salmon with cajun seasoning. Cook on each side 3-5 minutes until golden brown to blackened.
  • While Salmon cooks, peel and dice avocados and chop cilantro. Mix remaining ingredients together. Serve on top of the salmon.
