Black Beans with Potatoes and Chilis
Ingredients:
- 14.5 oz Canned Black Beans 1 can, drained and rinsed
- 1.5 lb Potatoes 4 potatoes, chopped into small cubes
- 1 Jalapenos finely chopped
- 0.50 c Fresh Cilantro chopped
- 3 cloves Garlic minced or pressed
- 2 tbsp Lime Juice
- 4 tbsp Olive Oil
- 1 tsp Cumin
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
Instructions:
- Saute the cumin in a large, dry pan until fragrant - about 1 minute.
- Add oil, garlic, and jalapeno peppers, saute about 3 minutes more, then add the onions and saute another 3-4 min.
- Add the chopped potatoes, sprinkle with salt and pepper, turn the flame very low and cook until potatoes are tender, about 10-15 min. Add water if needed to keep the potatoes from burning.
- Add the black beans and heat through.
- Add the lime juice and cilantro, stir and serve.
