Beef & Cranberry Meatballs

  • Chop cranberries and cilantro. Set aside.
  • Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil.
  • Except for coconut oil, place all ingredients in a large bowl and mix until combined.
  • With clean hands or a 2-inch ice cream scoop, form meat mixture into approximately 12 meatballs.
  • In a large skillet over medium-high heat, melt coconut oil.
  • Place meatballs in skillet and cook for approximately 10 minutes, turning often to brown all sides. Meatballs might need to be browned in batches to avoid overcrowding the skillet.
  • Place meatballs on baking tray, about 2-inches apart. Place tray in the oven and bake for approximately 10 minutes until meatballs are cooked through and reach an internal temperature of 165 degrees F.
  • Remove meatballs from oven. Serve with your favorite side dish.
