Beef & Cranberry Meatballs
Ingredients:
- 0.25 c Onions minced
- 0.25 c Dried Cranberries chopped
- 0.25 c Fresh Cilantro chopped
- 1 lb Ground Beef can substitute ground bison, ground turkey, or ground chicken
- 1 tsp Ground Ginger
- 2 tsp Ground Black Pepper Omit for Strict AIP
- 1 tsp Dried Sage
- 1 tsp Sea Salt
- 1 tbsp Coconut Aminos Or Tamari
- 1 tbsp Coconut Flour
- 1 tbsp Coconut Cream
- 1 tbsp Coconut Oil for skillet
Instructions:
- Chop cranberries and cilantro. Set aside.
- Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil.
- Except for coconut oil, place all ingredients in a large bowl and mix until combined.
- With clean hands or a 2-inch ice cream scoop, form meat mixture into approximately 12 meatballs.
- In a large skillet over medium-high heat, melt coconut oil.
- Place meatballs in skillet and cook for approximately 10 minutes, turning often to brown all sides. Meatballs might need to be browned in batches to avoid overcrowding the skillet.
- Place meatballs on baking tray, about 2-inches apart. Place tray in the oven and bake for approximately 10 minutes until meatballs are cooked through and reach an internal temperature of 165 degrees F.
- Remove meatballs from oven. Serve with your favorite side dish.
