Baked Cod with Fennel and Lemon

Ingredients:

  • 1 Fresh Fennel thinly sliced
  • 2 Shallots chopped
  • 3 cloves Garlic minced or pressed
  • 2 tbsp Olive Oil
  • 32 oz Cod Filets 6-8 oz each
  • .25 c White Wine
  • .25 c Fresh Oregano chopped
  • 2 Lemons thinly sliced
  • 1 tsp Sea Salt
  • .5 tsp Ground Black Pepper
  • 2 tbsp Fresh Parsley chopped

Instructions:

  • Preheat oven to 450 degrees.
  • In a large ovenproof skillet, cook fennel, shallots, and garlic in oil over medium heat, stirring occasionally until browned, about 10 minutes.
  • Add fish and wine to skillet, season with salt and pepper. Top with chopped oregano and sliced lemons. Bake in oven for 15 minutes or until fish is flaky. Garnish with fresh parsley.
