Bacon-lovers can rejoice with this homemade and crowd-pleasing mayonnaise made with bacon fat. If you love the taste of bacon and mayonnaise, then this is ideal for you. This bacon-flavored mayonnaise will transform your favorite sandwich from ‘bland’ to ‘oh wow’. Bacon mayo is very simple to make in a blender – just like any homemade mayonnaise would be. Not only did we use avocado oil in this recipe we also threw some rendered bacon fat giving this bacon flavored mayo a huge flavor boost!
To make a traditional mayonnaise, egg yolks, water, salt, and a few flavorings—such as mustard powder and lemon juice or vinegar—are whisked together vigorously while simultaneously slowly drizzling oil into the mixture (a food processor makes this process nearly foolproof). As the oil hits the bowl, the rapid action of the whisk quickly breaks it up into tiny droplets, which are kept suspended with the help of the emulsifiers in the egg yolk.
As the sauce gets thicker and thicker, its viscosity makes it easier to break the oil into minute droplets, and as a result, oil can be added more rapidly. The final result is the rich, creamy, mild-flavored condiment we all know so well.
This homemade Baconnaise could be great on sandwiches, but you can use it as a decadent dip with sliced vegetables or french fries. Once this stuff gets out and everyone starts making it, it’ll be the new “it” condiment. What could be better for dipping your fries or spreading on your burger?
Easy bacon mayo in under 2 minutes!
1 cup avocado oil
2 Tbsp bacon fat, melted
1/2 tsp sea salt
1/2 tsp mustard powder
1/2 Tbsp white wine vinegar
Add all ingredients to a jar
Place an immersion (stick) blender into the jar making sure to keep the blender on the bottom.
Start blender taking care to leave it on the bottom until mayonnaise begins to emulsify.
Slowly bring the blender up through the jar making sure to incorporate all of the oil.
