Artichoke and Tomato Paella
Ingredients:
- 4 c Vegetable Broth
- 2 c White Rice uncooked
- 14 oz Artichoke Hearts 1 can, quartered, rinsed and drained
- 0.50 c Frozen Spinach chopped, thawed and drained
- 0.50 c Green Peas frozen
- 5 oz Bell Peppers 1 bell pepper, chopped
- 1 Tomatoes sliced into wedges
- 1 c Onions 1 onion, chopped
- .5 c Carrots 1 carrot, chopped
- 3 cloves Garlic minced or pressed
- 1 tbsp Dried Parsley
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
Instructions:
- Combine all ingredients in slow cooker, stirring to combine.
- Cover and cook on low 4 hours or high for 2 hours.
