AIP Zuppa Toscana
Ingredients:
- 1 tbsp Olive Oil
- 1 lb Ground Pork
- 3 cloves Garlic minced or pressed
- 1 c Onions chopped
- .5 tsp Dried Thyme
- .5 tsp Dried Rosemary
- 6 c Vegetable Broth
- 1 tsp Sea Salt
- 3 c Sweet Potatoes peeled and diced
- 6 c Kale packed
- 1 c Full Fat Canned Coconut Milk
- 2 tbsp Coconut Cream
Instructions:
- In a large stock pot over medium heat, combine the olive oil and ground meat.
- Cook for 5 minutes, stirring frequently, until the meat is browned. Drain the excess fat if desired.
- Add the garlic, onions, salt, rosemary, and thyme. Cook, stirring occasionally, until the onion starts to become translucent, 3 to 5 minutes.
- Add the broth and sweet potatoes, increase the heat to medium-high, and bring to a boil.
- Boil for 2 minutes, then reduce the heat to low. Cover and simmer for 15 minutes.
- Stir in the kale until wilted. Add the coconut milk and coconut cream, and stir until warmed through. Serve immediately.
