AIP Chicken Caesar Salad
Ingredients:
- 1 lb Boneless Skinless Chicken Breasts sliced
- 1.5 c Chicken Broth
- .5 c Coconut Cream
- 4 Anchovies minced
- ⅙ c Fresh Parsley chopped
- 1 tbsp Fresh Chives minced
- .125 tsp Sea Salt or more to taste
- 8 c Romaine Lettuce chopped
- .5 c Black Olives sliced
Instructions:
- Place the chicken and broth in a saucepan and bring to a boil. Reduce the heat to medium and simmer 10-15 minutes or until the chicken is cooked through.
- In a mixing bowl, combine the coconut cream, anchovies, parsley, chives, and salt.
- To serve, layer each salad bowl with equal parts lettuce, chicken, dressing, and black olives.
